The prototype for the Gail's chain of bakeries and cafes, with a mixture of contemporary structural insertions and exposed original features.

GAIL's Bakery produces hand crafted, additive-free bread in the traditional way. 

This Portobello Road shop and café brings the style of a New York delicatessen to London. Stripped brick walls are mixed with clean modern stairs, ramps, walls and furniture. 

A chef's cookery demonstration area sits in the centre of the space, surrounded by cantilevering glass walls tied back to the stainless steel kitchen for stability.
